COFFEE FILTERS

Coffee filters .... Who knew! And you can buy 1,000 at the Dollar Tree for almost nothing even the large ones.

1. Cover bowls or dishes when cooking in the microwave. Coffee filters make excellent covers.

2. Clean windows, mirrors, and chrome... Coffee filters are lint-free so they'll leave windows sparkling.

3. Protect China by separating your good dishes with a coffee filter between each dish.

4. Filter broken cork from wine. If you break the cork when opening a wine bottle, filter the wine through a coffee filter.

5. Protect a cast-iron skillet. Place a coffee filter in the skillet to absorb moisture and prevent rust.

6. Apply shoe polish. Ball up a lint-free coffee filter.

7. Recycle frying oil. After frying, strain oil through a sieve lined with a coffee filter.

8. Weigh chopped foods. Place chopped ingredients in a coffee filter on a kitchen scale.

9. Hold tacos. Coffee filters make convenient wrappers for messy foods.

10. Stop the soil from leaking out of a plant pot. Line a plant pot with a coffee filter to prevent the soil from going through the drainage holes.

11.. Prevent a Popsicle from dripping. Poke one or two holes as needed in a coffee filter.

12. Do you think we used expensive strips to wax eyebrows? Use strips of coffee filters..

13. Put a few in a plate and put your fried bacon, French fries, chicken fingers, etc on them. It soaks out all the grease.

14. Keep in the bathroom. They make great "razor nick fixers."

15. As a sewing backing. Use a filter as an easy-to-tear backing for embroidering or appliqueing soft fabrics.

16. Put baking soda into a coffee filter and insert into shoes or a closet to absorb or prevent odors.

17. Use them to strain soup stock and to tie fresh herbs in to put in soups and stews.

18. Use a coffee filter to prevent spilling when you add fluids to your car.

19. Use them as a spoon rest while cooking and clean up small counter spills.

20. Can use to hold dry ingredients when baking or when cutting a piece of fruit or veggies.. Saves on having extra bowls to wash.

21. Use them to wrap Christmas ornaments for storage.

22. Use them to remove fingernail polish when out of cotton balls.

23. Use them to sprout seeds.. Simply dampen the coffee filter, place seeds inside, fold it and place it into a plastic baggie until they sprout.

24. Use coffee filters as blotting paper for pressed flowers. Place the flowers between two coffee filters and put the coffee filters in phone book..

25. Use as a disposable "snack bowl" for popcorn, chips, etc.

The Weight and the Wait

You know that feeling you get when something you've given up hope on actually happens? It kind of feels like a weight you didn't know was on your shoulders is finally lifted. You laugh, you cry, you want to shout hallelujah, you drop to your knees to thank God for the blessing. I had that experience today. I had just finished booking a hotel room for our upcoming rental hunting trip to Syracuse. I popped on over to Casey's email to check for the booking confirmation and saw this:

"Dear Casey,

I am pleased to inform you that a TA-ship has become available; and the Linguistics Committee has decided to offer you a Spanish Teaching Assistantship to support study in the Linguistic Studies MA Program."

I immediately burst into tears and called Casey over to see. I had given up hope that he would be offered the TA-ship and was ready to have 30k or more per year in student loans for his 2 year program. Now his tuition is covered and he gets a stipend that will help us pay for a place to live. 

This experience has humbled me greatly. I was very angry with Heavenly Father for telling us this is the right thing and then not opening doors to do it. I made sure he knew I was angry. He has, once again, reminded me that I am not in charge and that he will provide what we need, even if it comes after a long wait. Now that this weight is off my shoulders, I can enjoy the massive reduction in my stress levels. I am going to be expressing my gratitude for this immense blessing for a long time to come.

Handling Stress

That moment when you are so stressed and anxious about money, moving, and life in general that you want to eat an entire pan of brownies, but also throw up, sleep all day, but also stay awake for three days to find any possible way to save a few pennies, not spend any money on anything ever, but also buy everything on your Amazon wishlists... I'm in that moment.

We have the money to get up to Syracuse to look at places to live, but we have no money to put into a rental. I'm trying really hard to just let go of control and let Heavenly Father take care of it, but I don't know how I can trust that we will magically find a place in our price range, that doesn't require a deposit and first month rent, and is in a safe area. I'm struggling to find the positives in my life when it feels like everything is just blowing up around me. I can't sleep because my anxiety is past manageable, but I can't take anything for it because I am pregnant and when I can sleep, I have nightmares that leave me more tired than I was when I fell asleep.

Ok, enough focusing on the negatives. We will be able to do this. We will find a place to live. We will be able to afford it.

Feeling Ignored

I've been struggling to feel like Heavenly Father cares about me. It seems like everything I pray for or about is just pushed aside and I am left thinking "why am I not being heard?" 
I prayed that Casey would get into more schools than Syracuse, nothing. 
I prayed that he would get the TAship, nada. 
I prayed that this baby would be a girl, no luck. 
I prayed that we would be able to rent the house we really wanted, more nothing. 
I pray to be able to sleep well, I get 5-6 hours a night.

There are some things that are being heard. Casey always comes home safe from work. The Bean is healthy and so is the baby. Somehow I am able to function well enough to keep my family alive. Those should be enough to make me feel like I am being heard, but I feel like those things would probably be that way anyway. I'm just tired of knowing that Syracuse is where we need to go and yet having no foreseeable way to live there. I'm tired of praying for things and having the exact opposite happen. I'm tired of feeling ignored by the one being that is always supposed to be there for me.

Fear not! I am not going to leave my faith behind. I'm just going to take a Pioneer approach. I will put my head down and just keep pushing the cart. I just hope that one day I won't have to feel this way.

Please, don't offer advice, scripture verses, or "comforting words." I've heard most and they are not helpful right now.

How I Bust Out Food Prep

The last few weeks I have finally jumped on the weekly food prep bandwagon. I love it! I have (mostly) healthy snacks for a whole week and it makes my life far less stressful. So, here is how I do it without being totally overwhelmed and exhausted at the end of the day.

Step One:
I peruse my pinterest boards on Sunday while I am menu planning (that is a story for another post). I have mine pretty well organized these days. I usually end up picking about 10 recipes at first. Muffins, quick breads, cookies, and crackers are my snack staples.

Step Two:
I narrow down the recipes to 4 or 5. I do this in conjunction with what produce/ingredients are on sale. We like muffins and quick breads with lots of fruit. I check what I have on hand and what I still need and then make my shopping list. I also look for deals on produce that makes a good snack as is. Carrots, cucumbers, watermelon, strawberries, etc. I also buy extra eggs to boil for a quick snack or as part of a meal.

Step Three:
Shopping day! My budget is pretty low ($30-35) so I try to use recipes that have similar ingredients. Most weeks I do prep the same day as shopping, but I will make it a separate step anyway.

Step Four:
Baking. I use recipes straight from my laptop to save on paper... and because our printer is dead. I arrange baked goods in order of baking temp, lowest to highest. It means I don't have to wait for the oven to cool down in between recipes. As soon as one recipe is in the oven, I start working on the next. I end up with plenty of time to sit and relax between recipes most of the time. Taking breaks is VERY important. You don't want to get burnt out early in the process.

Step Five:
Other prep. I wash all the produce and get it ready to cut. Then I chop everything up, put it in bags or containers, and put it in the fridge. I finally found a way to hard boil eggs that works for me. First, I bring them to room temperature because it makes them easier to peel. That is why hard boiled eggs are the last thing I do. I put them in a sauce pot, cover them (and add a little extra) with water, stick them on the stove, turn it to high, and wait for them to come to a rolling boil. Once they are boiling, I turn off the heat, cover the pot, and set the timer for 10 minutes. Once the timer goes off, I run the eggs under cold water until they are cool to the touch. Then they get dried off and put in the fridge.

So, there it is. My weekly food prep in a nutshell. If I have more than 12 muffins or one loaf of quick bread I bag it up and throw it in the freezer for the next week. One moderately tiring day and a week full of mostly healthy snacks for the three of us.

100th Post

In honor of my 100th post, I'm going to tell you all about my day of snack prep!

I came in almost 10 bucks under my food budget for this week! How did I do it? Kroger had AMAZING sales on produce. I came home with a big bunch of overripe bananas, 3 zucchini, 3 yellow squash, 1 pound of carrots, a few apples, a huge bunch of cilantro, and a pound of strawberries along with my non-produce groceries: a pound of brown rice, chicken and beef bullion, 3 packs of hot dogs, 18 eggs, and a gallon of milk.

I have been trying to avoid buying snack food as much as possible a) because it is expensive and b) most of it is super unhealthy. I've also been trying to make healthier food for Casey to lose weight, the Bean to grow up with good food, and for me to not gain a ton of weight this pregnancy. I always menu plan on Sundays and I focused on meatless meals this week. Pottage (brown rice, lentils, and veg) and black bean soup are the two that will provide plenty of leftovers. So, as far as snacks go, I wanted snacks with lots of fruit and veggies involved. I have a lot of sweet things on my pinterest and I scoured my board for healthy ones. I decided on peanut butter breakfast cookies, peanut butter breadstrawberry banana greek yogurt bread, spiced carrot muffins, and mini vanilla wafers. I figured if I just did it all in one day, I would have snacks for the week and not have to worry about feeding me or the Bean while Casey is at work. I probably won't make the pb bread again. It is pretty crumbly and a little dry, but everything else is delicious! The only really unhealthy thing is the vanilla wafers, but I can't be healthy all the time.

So, there it is. I made a lot of food today. My feet hurt, I am exhausted, and I never want to mash another banana in my life, but I'm glad I did it. Having one less thing to think about makes room for things like cleaning up the huge mess that is my kitchen. Maybe I do have that 2nd trimester energy everyone always talks about. *Phew* What a day!
